Chicken Croissant

Finally, dust the worktop lightly with some all-purpose flour and roll out the refrigerated dough. (Flatten the dough into a rectangle shape preferably)
For the croissant dough
- 1 cup maida flour
- 1/2 cup warm milk
- 1 tsp yeast
- 1 tsp sugar
- 1 tbsp butter
- Salt, to taste
For the Mixture
- 1 tbsp butter or olive oil
- 1 cup shredded chicken
- 4 garlic cloves, finely chopped
- 1 1/2 cups red capsicum
- 1 1/2 cups green capsicum
- 4 green chillies chopped
- 1 cup chopped spring onion (Bulb and Green separate)
- 1 tsp soy sauce
- 1-2 tsp cajun spice
- 1 cup mozzarella
- Salt, to taste
- Cream cheese spread
METHOD
For the croissant dough
- Set aside yeast with warm milk
- Simultaneously mix together all the remaining ingredients and add in the yeast.
- Allow of the dough rest in the refrigerator for couple of hours until risen.
For the Mixture
- Heat butter or oil in a non-stick pan, sauté chopped garlic and spring onion bulbs until golden brown.
- Add in, chopped red capsicum, green capsicum and green chilies. Add salt.
- Then, add one cup shredded chicken (already cooked, preferably in pepper seasoning)
- Add in cajun spices and let the mixture cook well.
- Add a tsp of soy sauce
- Lastly, add in spring onion greens followed by shredded mozzarella cheese.
Finally, dust the worktop lightly with some all-purpose flour and roll out the refrigerated dough. (Flatten the dough into a rectangle shape preferably)
- Then, with a large knife, trim the edges cut the dough lengthways into two equal strips and cut them out in triangles
- Stretch out the two shorter points, put some stuffing in the center and then starting from short edge, roll up the triangles towards the shorter points.
- As soon as they are shaped, place the croissants on a greased baking tray. Leave them in warm place until doubles in size. This will take about ten minutes.
- Glaze the croissants lightly with milk wash and place the tray in the preheated oven and bake for fifteen minutes.
